A custard-like baked dessert made with leftover bread, eggs, and dairy.

Challah is an ideal bread for this recipe. Any relatively soft but sturdy white bread may be substituted.
Ingredients
- 1 egg (extra-large)
- 3 tbsp orange liqueur (alternatively: 3 tbsp cognac or whiskey, plus 1 tbsp orange zest)
- 3⁄4 c dried cranberries
- 20 oz bread
- 4 eggs (extra-large)
- 3⁄4 c sugar
- 1 tbsp vanilla extract
- 1⁄4 tsp salt
- 1⁄2 tsp nutmeg
- 21⁄2 c heavy cream
- 21⁄2 c milk
- 4 oz bread
- 2 tbsp butter
- 2 tbsp sugar
Instructions
- In measuring cup or jar, lightly beat 1 egg and 3 tbsp orange liqueur. Add 3⁄4 c dried cranberries, mixing well. Cover with plastic wrap.
- Cut 20 oz bread into 1″ cubes and place in large bowl.
- In separate bowl, whisk together 4 eggs and 3⁄4 c sugar. Whisk in 1 tbsp vanilla extract, 1⁄4 tsp salt, 1⁄2 tsp nutmeg, 21⁄2 c heavy cream, and 21⁄2 c milk.
- Pour custard over bread; toss to cover well.
30 minutes pass
- Preheat oven to 325°F.
- Line a 13″ × 9″ baking pan with foil; butter foil.
- Mix cranberries into bread/custard mixture.
- Pour custard mixture into baking pan.
- Cut 4 oz bread into 1″ cubes.
- Melt 2 tbsp butter.
- Place bread cubes on top of custard; push down so only tops of bread cubes are showing.
- Brush bread cubes with melted butter; sprinkle with 2 tbsp sugar.
- Place pan into oven.
45 minutes pass
- Remove pudding from oven. Let cool in pan.
10 minutes pass
- Extract pudding from pan. Serve warm.
