Ingredients
(A)
- 3 tbsp olive oil
- 11⁄2 cup diced sweet onions
- 1⁄8 tsp salt
(B)
- 4 tbsp olive oil
- spices
- 1 tsp cumin
- 1⁄2 tsp allspice
- 1⁄8 tsp cloves
- 1⁄8 tsp cinnamon
- 1⁄8 tsp nutmeg
- 1⁄8 tsp black pepper
(C)
- 1 cup lentils (green) (rinsed and drained)
- 4 cups water
- 1⁄2 tsp salt
(D)
- 1 cup rice (white, long-grain) (do not rinse!)
- 4 cloves garlic
(E)
- 1⁄2 cup black raisins
(F)
- 1⁄4 cup chives, chopped
(G)
- 1⁄4 cup chives, chopped
Instructions
- Heat (medium) olive oil in skillet and brown onions (A); reduce heat to very low; keep covered
- Meanwhile, heat (medium) olive oil in saucepan and add spices (B)
- Add lentils, stir to coat, add water and salt (C)
- Bring saucepan with lentils to boil; reduce heat to medium-low; cover
(30 minutes pass)
- Add rice and garlic (D) to saucepan with lentils
- Add raisins to skillet with onions
(30 minutes pass)
- Take saucepan with lentils and rice off heat; let stand, uncovered
(10 minutes pass)
- Mix half of chives (F) into lentils and rice
- Remove lentils & rice to large bowl
- Sprinkle other half of chives (G) on top
- Cover lentils & rice with onions & raisins
Serve with Greek yogurt and sauce.
